🧀 Ingredients

  • 1-1/3 cups blanched almond flour
  • 1-1/2 tsp baking powder
  • 1-1/2 cups shredded mozzarella cheese
  • 2 oz. cream cheese
  • 1/4 cup grated Parmesan cheese
  • 2 large pastured eggs

👩‍🍳 Instructions

  1. Preheat oven to 350˚F and grease a muffin pan.
  2. In a medium bowl, mix together almond flour and baking powder. Set aside.
  3. Melt mozzarella and cream cheese in a saucepan over low heat (or microwave for 1 minute). Stir, heat again for 1 more minute, and stir until smooth.
  4. Add the almond flour mixture and eggs to the melted cheese and mix well.
  5. Grease your hands and knead the dough to form a sticky ball. If the dough is too wet, add almond flour 1 tsp at a time until manageable.
  6. Transfer the dough to parchment paper or a silicone baking mat.
  7. Cut the dough ball into 4 equal parts, then cut each part into 6 small pieces (24 total).
  8. Roll each piece into a ball and lightly coat in Parmesan cheese.
  9. Place 3 balls per muffin cup to form the clover shape.
  10. Bake for 20 minutes, or until golden brown. Allow to cool slightly before serving.
