🧀 Ingredients
- 1-1/3 cups blanched almond flour
- 1-1/2 tsp baking powder
- 1-1/2 cups shredded mozzarella cheese
- 2 oz. cream cheese
- 1/4 cup grated Parmesan cheese
- 2 large pastured eggs
👩🍳 Instructions
- Preheat oven to 350˚F and grease a muffin pan.
- In a medium bowl, mix together almond flour and baking powder. Set aside.
- Melt mozzarella and cream cheese in a saucepan over low heat (or microwave for 1 minute). Stir, heat again for 1 more minute, and stir until smooth.
- Add the almond flour mixture and eggs to the melted cheese and mix well.
- Grease your hands and knead the dough to form a sticky ball. If the dough is too wet, add almond flour 1 tsp at a time until manageable.
- Transfer the dough to parchment paper or a silicone baking mat.
- Cut the dough ball into 4 equal parts, then cut each part into 6 small pieces (24 total).
- Roll each piece into a ball and lightly coat in Parmesan cheese.
- Place 3 balls per muffin cup to form the clover shape.
- Bake for 20 minutes, or until golden brown. Allow to cool slightly before serving.
