🛒 Ingredients
- 8 oz organic pre-shredded mozzarella cheese
- 2 oz organic cream cheese
- 1½ cups almond flour
- 3 tsp baking powder
- 2 large pastured eggs
- 1 large egg white (for brushing)
- 2 tsp sesame seeds, poppy seeds, or Everything Bagel seasoning (optional)
🔪 Instructions
- Preheat oven to 400°F (204°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a bowl, whisk together almond flour and baking powder.
- Melt cheese: In a large microwave-safe bowl, combine mozzarella and cream cheese. Microwave on high for 2 minutes, stirring after 1 minute. Alternatively, melt gently in a double boiler on the stove.
- Combine: Add the almond flour mixture and 2 whole eggs to the melted cheese. Knead the dough by hand until smooth and uniform. If the dough is sticky, add a small sprinkle of almond flour or microwave for 20 seconds to soften.
- Form rolls: Divide dough into 8 equal portions. Roll into balls and place on the prepared baking sheet.
- Brush and season: Brush each roll with egg white and sprinkle with your choice of seeds or seasoning, if desired.
- Bake: Bake for 11–14 minutes, until golden and set.
- Serve: Allow to cool slightly. For reheating, microwave briefly to warm.
