Ingredients for the Frosted Cinnamon Muffin

  • 1 pastured egg
  • 1 Tbsp water
  • 1 Tbsp organic coconut oil or butter, melted
  • Dash of pure vanilla extract
  • 3 Tbsp Bob’s Red Mill Golden Flax Meal
  • 1½ tsp ground cinnamon
  • 4 tsp sweetener* or 2 tsp Swerve
  • Pinch of sea salt
  • Generous ½ tsp aluminum-free baking powder

Instructions

Microwave Method:
Place all ingredients in a large coffee mug (at least 10 oz. to prevent overflow). Mix thoroughly. Microwave for 1 minute until the muffin is firm and fully cooked.

Oven Method:
Preheat oven to 350°F. Use an 8 oz. ramekin, mix all ingredients inside, and bake for 15 minutes or until the top is no longer gooey.

Optional Add-In: Add a few Lily’s chocolate chips to the batter or sprinkle mini chips on top after baking—they’ll melt into a decadent topping.


Optional Low-Carb Frosting

This rich, creamy frosting is perfect for those who want the full cupcake experience.

  • 1 Tbsp organic cream cheese
  • 1 heaping Tbsp plain Greek yogurt
  • ¼ tsp vanilla extract
  • 2 tsp sweetener* (powdered in a coffee grinder)

You may substitute with liquid stevia to taste—start with one drop at a time to avoid bitterness.
