Mary Clugston shared this tasty recipe as a delicious way to enjoy strawberries. It can transform an ordinary piece of chicken, fish, chicken taco salad or any salad into a gourmet meal. This strawberry salsa is fresh, crisp and naturally sweet with a great balance of flavors. It’s a “must try!” When strawberry season is over, try using two cups of thawed frozen strawberries for a fresh taste year-round.
INGREDIENTS
- 2 cups strawberries (organic is best), hulled and finely diced
- 1/2 a small red onion, finely diced
- 1 Jalapeno pepper (stems/seeds removed), finely diced
- 2/3 cup cilantro (or parsley), finely chopped
- Juice of 1 lime
- Pink Himalayan salt & black pepper, to taste
- Liquid stevia, to taste, if needed
INSTRUCTIONS
- Add all ingredients into a medium bowl and mix gently. Yum!
